I have struggled with health issues since childhood. By the time I was 19, I had my gall bladder removed and was put on medication for GERD. I was told that this would fix my problems and that I’d need to take medication for the rest of my life or I’d get esophageal cancer. That didn’t sound like fun, so I took my Prilosec faithfully everyday. My teeth were prone to decay, I carried excess weight I couldn’t shake with diet or exercise (so why bother?), I didn’t sleep well, and my hormones were a mess.
In the summer of 2011, I learned that I was sick because I was eating a standard American diet (approved by the FDA!). I learned that by eating whole foods and avoiding anti-nutrients and toxins I could have prevented all of the ailments I’ve been dealing with my whole life. This pissed me off. My parents fed me according to the recommendations laid out in the food pyramid. I cooked my own food from scratch and ate plenty of whole grains (my best friend is a wheat farmer!). How could that make me sick?
Removing grains, legumes, dairy, sugar, industrial vegetable and seed oils, etc. from our diet has had a huge impact on all areas of our life. My family has seen improvement or elimination of the following symptoms:
We are still in the process of healing, but the progress we’ve made has been life changing. I cannot wait to see how it’ll be when we are off all medications and no longer suffer from digestive distress.
